Celebrate Cake Day with these Tasty Cake Recipes

The official origin of Cake Day is a bit unclear. However, it’s a great opportunity to go against your diet and enjoy a delicious treat!  So, this year on November 26, indulge in a slice of cake by using these recipes.

Pear Bundt Cake

You’ll need: 1 can (15 ounces) of reduced-sugar sliced pears, 1 package of white cake mix, 2 large egg whites, 1 large egg, 2 teaspoons of confectioners’ sugar

Step 1: Preheat your oven to 350 degrees.

Step 2: Drain the pears, reserving the syrup. Then, chop the pears into pieces.

Step 3: Place the pears and syrup in a large bowl. Add the cake mix, egg white, and egg. Beat these ingredients on low speed for about 30 seconds. Then, beat on high for 4 minutes.

Step 4: Coat a 10-inch fluted tube pan with cooking spray and dust with flour. Add the batter to the pan and bake for 50-55 minutes or until a toothpick inserted in the center comes out clean.

Step 5: Allow the cake to cool for 10 minutes. Then, remove it from the pan place it onto a wire rack to cool completely. Dust with confectioners’ sugar and serve.

Sparkling Cider Pound Cake

You’ll need: 3/4 cup of butter (softened), 1-1/2 cups of sugar, 3 large eggs, 1-1/2 cups of all-purpose flour, 1/4 teaspoon of baking powder, 1/4 teaspoon of salt, 1/2 cup of sparkling apple cider

Cake Glaze: 3/4 cup of confectioners’ sugar, 3 to 4 teaspoons of sparkling apple cider

Step 1: Preheat your oven to 350 degrees.

Step 2: Line the bottom of a greased 9Ă—5-inch loaf pan with parchment paper. Grease the paper.

Step 3: In a large bowl, cream the butter and sugar until light and fluffy. Add in the eggs, one at a time, and beat the mixture well after each addition.

Step 4: In a separate bowl, whisk together the flour, baking powder, and salt. Then, add these ingredients to the creamed mixture alternately with cider, beating well after each addition.

Step 5: Transfer the cake mix to your prepared pan. Bake for 40-50 minutes or until a toothpick inserted in center comes out clean.

Step 6: Cool the cake in the pan for about 10 minutes. Then, move it to a wire rack to cool completely.

Step 7: In a small bowl, mix together the glaze ingredients until smooth. Afterward, spoon the glaze over the cake. Serve.

Pumpkin-Pecan Spice Cake

You’ll need: 1 box (18-1/4 ounces) of spice cake mix, 1 can (16 ounces) of solid-packed pumpkin, 1/2 cup of butter(softened), 4 eggs

Layer Foundation: 2 cups of crushed vanilla wafers, 1 cup of chopped pecans, 3/4 cup of butter (softened)

Icing: 2/3 cup of butter (softened), 1 package (3 ounces) of cream cheese (softened), 3 cups of confectioners’ sugar, 2 teaspoons of vanilla extract, 1/2 cup of caramel ice cream topping

Step 1: In a mixing bowl on medium speed, beat the wafers, pecans, and butter together until crumbly. This should take about 1 minute.

Step 2: Press the crust mix into three greased and floured 9-inch round cake pans.

Step 3: In another mixing bowl, beat the cake mix, pumpkin, butter, and eggs for about 3 minutes. Spread over crust in each pan. Then bake at 350 degrees for about 30 minutes or until a wooden pick inserted near the center comes out clean.

Step 4: Cool the cake in pans 10 minutes. Then, move the cake to wire racks and cool completely.


Step 1: Combine the butter and cream cheese in a small mixing bowl. Next, add the sugar and vanilla and beat the mixture on medium speed until light and fluffy. This should take about 3 minutes.

Step 2: Thinly spread the icing between the layers (crumb side down) and on the sides of the cake. Spread caramel topping over the top of the cake, allowing some to drip down the sides. Cool and serve.
